Citrus Curd Tart
Ingredients:
Crust
- 1 1/2c. almond flour
- 1/4c. arrowroot
- 3 tbsp butter (coconut oil )
- 4 tbsp sugar (sweetner)
- 1 1/2 tsp vanilla
Citrus Curd
- 1c. citrus juice (I used lemon + grapefruit)
- 3/4c. sugar
- 5 eggs
Directions:
Preheat your oven to 350c
For the crust place all the ingredients into a large bowl (make sure your butter is melted.)
Mix until it forms a dough. Then press evenly into a 10" tart pan.
Bake for 15min or until golden brown. Cool all the way before adding the filling.
For the curd I use the microwave which makes it so easy.
Place all your ingredients into a microwave safe bowl. Then take an emersion blender and blend until smooth, (you could use a blender for this too.) Place in the mirowave in for 1 min and whisk, do this two more times. Then place in for 30 second intervals until thick and pudding like. Cool the curd until its no longer warm and spoon into the tart shell. Top with mix berries, whipped cream, or leave it just how it is! Enjoy!
