Coconut Passion Fruit Shortbread Cookie Sandwiches

 



These cookies are one of my new favourites! It's made of a crumbly, gluten free, shortbread cookie. Nestled between the cookies is a passion fruit, white chocolate ganache.

Ingreidents:

Cookie

  • 1 c. coconut flour
  • 1 c. almond flour
  • 1 tbsp arrowroot starch/corn starch
  • 2 tsp baking soda
  • 1 tsp salt
  • 1 tsp vanilla
  • 1/3 c. coconut oil
  • 1/4 c. milk
  • 1 egg
  • 2 tbsp passion fruit
  • 2 tsp vinegar 
  • 1/4 c. sweetner
Filling

  • 1/2 c. white chocolate
  • 1/2 c. cream
  • 1 tbsp arrowroot starch/corn starch
  • 1 tsp vanilla
  • 1/3 c. passion fruit
Instructions:

Preheat the oven to 315 degrees 
Mix in a large bowl: almond and coconut flour, arrowroot starch, baking soda, and salt.
In a seprate bowl mix the vanilla, coconut oil, milk, egg, passion fruit, vinegar, and the sweetner.
Slowly mix the wet ingredients into the dy until a crumbly dough forms. 
Flour your surface and roll out the dough as thin as you like. Place on a parchment 
lined baking sheet and bake until golden brown around 7 minutes. When done cool on a wire rack
until completly cool.
For the filling gently heat the cream, chocolate, and starch until the chocolate is melted and th mixture is thick. Cool the mixture in the fridge until completly cold. 
Whisk gently and add in the passion fruit and vanilla. 
To assemble, place a dolop of the ganache on one cookie and place another cookie on top and your done. Enjoy!
